Jamaican Jerk Salmon with Creamy Coconut Rice

  1. In a medium saucepan, combine long-grain white rice, coconut milk, water, and 1/2 tsp salt. Bring to a boil, then cover, lower heat to low, and simmer for 15 minutes until rice is tender. Fluff with a fork.
  2. Warm drained sweet corn in a small skillet with unsalted butter and remaining 1/2 tsp salt over medium heat for 3 to 4 minutes. Mix into the cooked coconut rice.
  3. Coat salmon fillets evenly with jerk seasoning on all sides.
  4. Heat avocado oil in a large skillet over medium-high heat. Add salmon fillets and sear for 4 to 5 minutes per side until cooked through and opaque.
  5. Plate each salmon fillet over a scoop of warm coconut corn rice.
