  1. Heat 1 teaspoon olive oil in a large skillet or wok over medium-high heat for 1 minute. Add 6 ounces ground turkey and cook, breaking it up, until browned, about 5 minutes.
  2. Add 1/2 thinly sliced red onion and 1 sliced red bell pepper to the skillet. Cook for 3-4 minutes until vegetables are tender-crisp.
  3. Stir in 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper. Cook for 1 minute more.
  4. Add 1 cup fresh spinach to the skillet and cook until just wilted, about 1-2 minutes. Garnish with 1 tablespoon fresh parsley before serving.
