  1. Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium heat. Add Italian sausage (casings removed) and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
  2. Add chopped yellow onion to the skillet and sauté for 3 minutes until softened. Stir in minced garlic, dried oregano, dried basil, and red pepper flakes (if using), and cook for 1 minute until fragrant.
  3. Pour in the can of diced tomatoes and chicken broth. Bring the mixture to a simmer. Stir in the penne pasta, salt, and black pepper. Cover the skillet and reduce heat to medium-low.
  4. Cook for 12-15 minutes, stirring occasionally to prevent pasta from sticking, until pasta is al dente and most of the liquid has been absorbed. If using, stir in the heavy cream during the last 2 minutes of cooking.
  5. Remove from heat and let stand for 5 minutes. Serve hot, topped with grated Parmesan cheese and fresh chopped parsley, if desired.

Notes

For a richer sauce, add 1/2 cup of heavy cream with the pasta. Adjust red pepper flakes to control the spice level.
