Ingredients
- 8 ounce mild Italian pork sausage (bulk)
- 2 zucchinis (medium, diced)
- 1 cup cherry tomatoes (halved)
- 5 eggs (large, beaten)
- 0.25 teaspoon salt
- 0.5 cup shredded mozzarella cheese
- 2 tablespoon fresh basil (chopped)
Instructions
- Place 8 ounces bulk mild Italian pork sausage into a 12-inch skillet over medium-high heat. Cook for 4 minutes, breaking it into bite-sized crumbles with a wooden spoon, until browned.
- Add 2 diced zucchini and 1 cup halved cherry tomatoes directly to the skillet with the sausage drippings. Sauté for 3 minutes until zucchini is tender-crisp.
- Season 5 beaten large eggs with 1/4 teaspoon salt. Lower the skillet heat to medium and pour the eggs over the sausage and vegetables.
- Gently fold and stir for 2 minutes until eggs are softly scrambled and just set.
- Sprinkle 1/2 cup shredded mozzarella cheese on top, remove from heat, cover for 1 minute to melt cheese, and garnish with 2 tablespoons chopped fresh basil.
