- 1 pound mild Italian sausage (casings removed)
- 1 tablespoon olive oil
- 1 yellow bell pepper (cored and sliced)
- 1 red bell pepper (cored and sliced)
- 0.5 yellow onion (medium, sliced)
- 2 clove garlic (minced)
- 28 ounce crushed tomatoes
- 1 teaspoon dried Italian seasoning
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 12 ounce whole wheat spaghetti
Instructions
- Bring a large pot of salted water to a boil for the pasta.
- In a large skillet, crumble the mild Italian sausage and cook over medium-high heat until browned, breaking it up with a spoon. Drain any excess fat and remove sausage from the skillet, setting aside.
- Add the olive oil to the same skillet. Add the sliced yellow bell pepper, red bell pepper, and yellow onion. Sauté until tender-crisp, about 5-7 minutes.
- Add the minced garlic to the vegetables and cook for 1 minute until fragrant.
- Stir in the crushed tomatoes, dried Italian seasoning, salt, and black pepper. Bring to a simmer and cook for 5 minutes to allow the flavors to meld. Return the cooked sausage to the skillet.
- While the sauce simmers, cook the whole wheat spaghetti according to package directions until al dente. Drain well.
- Add the drained pasta directly to the skillet with the sausage and sauce. Toss everything together until the pasta is well coated. Serve hot.
Notes
If you enjoy a touch of sweetness, a pinch of sugar can be added to the tomato sauce. Leftovers reheat well.
