- 14.5 ounce diced tomatoes (undrained)

- 1.25 cup chicken broth
- 1 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 cup fresh green beans (trimmed, halved)
Instructions
- Heat 1 tablespoon olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the ground pork and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add the chopped yellow onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
- Stir in the diced tomatoes (undrained), white rice, chicken broth, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer.
- Reduce heat to low, cover the skillet, and cook for 12-15 minutes, or until most of the liquid is absorbed and the rice is nearly tender. Stir in the fresh green beans, re-cover, and cook for another 3-5 minutes, or until green beans are tender-crisp.
- Fluff the rice with a fork and serve hot.
