Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add 1 pound of ground turkey and cook, breaking it apart with a spoon, until browned, about 5 to 7 minutes.
  2. Drain any excess fat from the skillet. Add 1 diced yellow onion and 1 diced red bell pepper, cooking until softened, about 5 minutes.
  3. Stir in 2 minced cloves of garlic, 1 teaspoon of dried oregano, and 1/2 teaspoon of dried basil. Cook for 1 minute until fragrant.
  4. Pour in 1 (28 ounce) can of crushed tomatoes and 2 cups of chicken broth. Bring the mixture to a simmer.
  5. Add 1 1/2 cups of uncooked rotini pasta to the skillet, stirring to combine. Cover the skillet, reduce heat to medium-low, and simmer for 12 to 15 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
  6. Season the skillet with 1 teaspoon of salt and 1/2 teaspoon of black pepper to taste. Let stand for a few minutes before serving.
  7. Meanwhile, prepare the store-bought garlic bread according to package directions.
  8. Garnish with 1/4 cup of chopped fresh parsley, if desired, and serve immediately with garlic bread on the side.

Notes

Leftovers store well in an airtight container for up to 3 days. If the sauce thickens too much, you can add a splash of chicken broth or water when reheating.
