Instructions

  1. Preheat oven to 375°F. Bring a large pot of lightly salted water to a boil. Add the ziti pasta and cook according to package directions until al dente, about 8-10 minutes. Drain well and set aside.
  2. While the pasta cooks, heat the olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add the yellow onion and cook until softened, about 5 minutes. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 8-10 minutes. Drain any excess fat.
  3. Stir in the minced garlic and cook for 1 minute until fragrant. Add the crushed tomatoes, tomato paste, water, dried oregano, dried basil, dried thyme, salt, and black pepper. Bring to a simmer, then reduce heat and cook for 10 minutes, stirring occasionally.
  4. Stir in the cannellini beans and fresh spinach. Cook for 2-3 minutes, until the spinach is wilted.
  5. Add the drained ziti pasta to the sauce and stir to combine evenly.
  6. Spoon half of the pasta mixture into a 9x13 inch baking dish. Sprinkle with 1 cup of mozzarella cheese. Top with the remaining pasta mixture, then sprinkle with the remaining 1 cup of mozzarella cheese and the grated Parmesan cheese.
  7. Bake for 20-25 minutes, or until the cheese is bubbly and lightly golden brown. Let stand for 5 minutes before serving.
