  1. Begin by cooking the white rice according to package directions. This step can be started concurrently while you prepare the stir-fry ingredients.
  2. Heat 1 1/2 teaspoons of the avocado oil in a large skillet or wok over medium-high heat. Add the Impossible Steak Bites and stir-fry for 4-6 minutes, until browned on all sides. Remove the Impossible Steak Bites from the skillet and set aside.
  3. Add the remaining 1 1/2 teaspoons of avocado oil to the skillet. Add the fresh asparagus spears and stir-fry for 3-4 minutes, until tender-crisp.
  4. Stir in the minced garlic and grated fresh ginger. Cook for 30 seconds until fragrant.
  5. Return the Impossible Steak Bites to the skillet. Add the low-sodium vegetable broth, low-sodium tamari, rice vinegar, and black pepper. Stir well to coat all ingredients and cook for 1-2 minutes, allowing the sauce to heat through and slightly reduce.
  6. Serve the stir-fry immediately over the prepared white rice. Garnish with chopped green onions, if desired.

Leftovers of this stir-fry and rice will keep well in an airtight container in the refrigerator for up to 3 days.
