- 1.6 pound Impossible Steak Bites (cut into bite-sized pieces if needed)
- 1 tablespoon avocado oil
- 1 pound asparagus spears (tough ends trimmed and cut into 1-inch pieces)
- 2 clove garlic (minced)
- 1 teaspoon fresh ginger (grated)
- 0.25 cup low-sodium vegetable broth
- 2 tablespoon low-sodium tamari
- 1 tablespoon rice vinegar
- 0.25 teaspoon black pepper
- 1 cup white rice
- 2 tablespoon green onions (chopped)
Instructions
- Begin by cooking the white rice according to package directions. This step can be started concurrently while you prepare the stir-fry ingredients.
- Heat 1 1/2 teaspoons of the avocado oil in a large skillet or wok over medium-high heat. Add the Impossible Steak Bites and stir-fry for 4-6 minutes, until browned on all sides. Remove the Impossible Steak Bites from the skillet and set aside.
- Add the remaining 1 1/2 teaspoons of avocado oil to the skillet. Add the fresh asparagus spears and stir-fry for 3-4 minutes, until tender-crisp.
- Stir in the minced garlic and grated fresh ginger. Cook for 30 seconds until fragrant.
- Return the Impossible Steak Bites to the skillet. Add the low-sodium vegetable broth, low-sodium tamari, rice vinegar, and black pepper. Stir well to coat all ingredients and cook for 1-2 minutes, allowing the sauce to heat through and slightly reduce.
- Serve the stir-fry immediately over the prepared white rice. Garnish with chopped green onions, if desired.
Notes
Leftovers of this stir-fry and rice will keep well in an airtight container in the refrigerator for up to 3 days.
