- 16 ounce Impossible ground meat
- 1 yellow onion (finely diced)
- 1 green bell pepper (finely diced)
- 1 can tomato sauce
- 2 tablespoon tomato paste
- 0.25 cup apple cider vinegar
- 2 tablespoon brown sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 0.5 teaspoon smoked paprika
- 1 teaspoon salt and black pepper
- 4 whole wheat hamburger buns
- 4 cup mixed greens (for side salad)
- 2 tablespoon Italian dressing (for side salad)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the Impossible ground meat and cook, breaking it up with a spoon, for 5-7 minutes until browned. Drain any excess liquid.
- Add the diced yellow onion and green bell pepper to the skillet. Cook for 3-4 minutes until softened.
- Stir in the tomato sauce, tomato paste, apple cider vinegar, brown sugar, Dijon mustard, garlic powder, and smoked paprika. Season with salt and black pepper.
- Bring the mixture to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened. Taste and adjust seasoning as needed.
- While the sloppy joe mixture simmers, lightly toast the whole wheat hamburger buns, if desired.
- Divide the mixed greens between two plates and drizzle with Italian dressing for a simple side salad.
- Spoon the Impossible Sloppy Joe mixture onto the whole wheat buns and serve immediately with the side salad.
