Ingredients
- 16 ounce plant-based ground
- 1 tablespoon olive oil
- 1 yellow onion (medium, diced)
- 1 red bell pepper (diced)
- 1 teaspoon garlic powder
- 0.5 teaspoon dried oregano
- 0.5 cup vegetable broth
- 1 can black beans (rinsed, drained)
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper (ground)
- 9 flour tortillas (medium, 8-inch)
- 1 cup cheddar cheese (shredded)
- 0.5 cup fresh cilantro (chopped)
- 0.5 cup salsa
- 0.5 cup plant-based sour cream
- 1 cup romaine lettuce (chopped)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add diced yellow onion and red bell pepper and cook for 5 minutes, until softened.
- Add plant-based ground, garlic powder, and dried oregano to the skillet. Break up the plant-based ground with a spoon and cook for 7-8 minutes until browned.
- Stir in vegetable broth and black beans. Bring to a simmer and cook for 3 minutes, until the liquid is mostly absorbed. Season with salt and black pepper.
- Warm the flour tortillas according to package directions. Spread a thin layer of plant-based sour cream on each tortilla, then add a scoop of the plant-based ground mixture, shredded cheddar cheese, and chopped romaine lettuce.
- Fold the tortillas into wraps and serve immediately with salsa and fresh cilantro, if desired.
Notes
Leftovers are great reheated or enjoyed cold. If preferred, turn this into a bowl by serving the mixture over rice instead of in wraps.
