Impossible Power Wraps

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced yellow onion and red bell pepper and cook for 5 minutes, until softened.
  2. Add plant-based ground, garlic powder, and dried oregano to the skillet. Break up the plant-based ground with a spoon and cook for 7-8 minutes until browned.
  3. Stir in vegetable broth and black beans. Bring to a simmer and cook for 3 minutes, until the liquid is mostly absorbed. Season with salt and black pepper.
  4. Warm the flour tortillas according to package directions. Spread a thin layer of plant-based sour cream on each tortilla, then add a scoop of the plant-based ground mixture, shredded cheddar cheese, and chopped romaine lettuce.
  5. Fold the tortillas into wraps and serve immediately with salsa and fresh cilantro, if desired.

Notes

Leftovers are great reheated or enjoyed cold. If preferred, turn this into a bowl by serving the mixture over rice instead of in wraps.
