  1. Cook the white rice: Combine 2 cups white rice and 3 cups water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes.
  2. While rice cooks, heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add 1 pound Impossible Ground Beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess liquid.
  3. Add 2 cloves minced garlic, 1 teaspoon grated fresh ginger, 1 thinly sliced red bell pepper, 1 thinly sliced yellow bell pepper, and 2 cups frozen broccoli florets to the skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
  4. In a small bowl, whisk together 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, and 1 teaspoon cornstarch until smooth.
  5. Pour the sauce mixture over the ingredients in the skillet and stir to coat. Cook for 1-2 minutes, until the sauce thickens slightly.
