  1. Marinate the chicken: In a large bowl, combine the chicken thighs, 1 1/2 cups plain whole milk yogurt, 1/4 cup ginger paste, 1/4 cup garlic paste, 2 green chilies (slit), 1 tablespoon ground coriander, 1 teaspoon ground turmeric, 2 teaspoons red chili powder, 1 teaspoon garam masala, 1 teaspoon black cumin seeds, and 1 1/2 teaspoons salt. Mix well to coat the chicken. Cover and refrigerate for at least 4 hours, or preferably overnight.
  2. Prepare crispy onions: Heat 1/2 cup vegetable oil in a large deep pan or Dutch oven over medium-high heat. Add 2 thinly sliced yellow onions and fry until golden brown and crispy, about 15-20 minutes. Stir frequently to ensure even browning. Remove onions with a slotted spoon and place on a paper-lined plate to drain. Reserve the oil.
  3. Par-cook the rice: Wash 4 cups basmati rice thoroughly until the water runs clear. Soak for 30 minutes, then drain. Bring a large pot of water to a rolling boil. Add 2 whole cinnamon sticks, 6 green cardamom pods, 6 whole cloves, and 1 1/2 teaspoons salt to the boiling water. Add the drained basmati rice and cook for 5-7 minutes, until the rice is about 70-80% cooked (the grains should still have a slight bite but be mostly tender). Drain immediately and spread on a baking sheet to cool slightly and prevent overcooking.
  4. Assemble the biryani: In the same large Dutch oven used for frying onions (or a clean one), spread half of the marinated chicken mixture as the first layer. Sprinkle with half of the 1 cup fresh cilantro leaves, half of the 1 1/2 cups fresh mint leaves, and a third of the crispy fried yellow onions. Carefully spread half of the par-cooked basmati rice over the chicken layer.
  5. Add the next layer: Place the remaining half of the marinated chicken mixture over the rice layer. Sprinkle with the remaining fresh cilantro leaves and fresh mint leaves, and another third of the crispy fried yellow onions. Top with the remaining basmati rice.
  6. Finish layering and 'dum' cooking: Drizzle the 1/4 cup melted Ghee and the saffron steeped in warm milk or water over the top layer of rice. Sprinkle with the remaining crispy fried yellow onions. Cover the Dutch oven tightly with a lid, sealing the edges with aluminum foil or a dough strip to trap the steam (dum). Cook on high heat for 10 minutes, then reduce heat to low and cook for another 45-50 minutes, allowing the biryani to steam and the flavors to meld. Turn off the heat and let it rest, undisturbed, for 15-20 minutes.
  7. Prepare Raita: While biryani cooks, in a small bowl, whisk 1/2 cup plain whole milk yogurt. Stir in 1 large cucumber (grated), 1/2 teaspoon roasted cumin powder, 1/4 teaspoon black pepper, and a pinch of salt. Mix well and refrigerate until serving.
  8. Prepare Onion Salad: In another small bowl, combine 1 small red onion (thinly sliced), the reserved 1 green chili (slit), and a pinch of salt. Squeeze juice from 1 lime wedge over it. Toss gently.
  9. Serve: Gently fluff the biryani with a spoon, mixing the layers. Serve hot with the prepared cucumber raita and onion salad. Garnish with reserved fresh mint and cilantro.

Notes

Ensuring a tight seal for the 'dum' cooking is crucial for flavor development. If your lid isn't tight, you can use a bit of dough or aluminum foil around the edges.
