- 4 whole wheat tortillas (large)
- 1 cup hummus (prepared)
- 0.5 cup sun-dried tomatoes (packed in oil, drained, chopped)
- 2 cup fresh spinach
- 1 cup shredded carrots
- 0.5 cup cucumber (diced)
- 2 tablespoon lemon juice
- 4 ounce tortilla chips
- 0.5 cup guacamole (prepared)
- 0.25 teaspoon salt
Instructions
- Lay out the large whole wheat tortillas on a clean surface.
- Evenly spread 1/4 cup of prepared hummus over each tortilla, leaving a small border around the edges.
- Divide the chopped sun-dried tomatoes, fresh spinach, shredded carrots, and diced cucumber among the four tortillas, placing them in a line down the center.
- Drizzle each wrap with 1/2 tablespoon of lemon juice and a pinch of salt.
- Carefully fold in the sides of each tortilla, then roll them up tightly from the bottom. Cut each wrap in half, if desired.
- Serve the wraps immediately with tortilla chips and prepared guacamole on the side.
Notes
Pre-shredded carrots and pre-made hummus and guacamole are excellent time-savers. Add a sprinkle of your favorite herbs like dried dill or mint for extra flavor.
