Hummus & Sun-Dried Tomato Wraps

  1. Lay out the large whole wheat tortillas on a clean surface.
  2. Evenly spread 1/4 cup of prepared hummus over each tortilla, leaving a small border around the edges.
  3. Divide the chopped sun-dried tomatoes, fresh spinach, shredded carrots, and diced cucumber among the four tortillas, placing them in a line down the center.
  4. Drizzle each wrap with 1/2 tablespoon of lemon juice and a pinch of salt.
  5. Carefully fold in the sides of each tortilla, then roll them up tightly from the bottom. Cut each wrap in half, if desired.
  6. Serve the wraps immediately with tortilla chips and prepared guacamole on the side.

Notes

Pre-shredded carrots and pre-made hummus and guacamole are excellent time-savers. Add a sprinkle of your favorite herbs like dried dill or mint for extra flavor.
