Instructions

  1. Lay out each whole wheat tortilla on a clean surface.
  2. Spread about 2 tablespoons of hummus evenly over the center of each tortilla, leaving a border around the edges.
  3. Evenly distribute the shredded carrots, chopped cucumber, thinly sliced yellow bell pepper, and mixed greens over the hummus.
  4. If using, sprinkle a small amount of crumbled feta cheese over the vegetables.
  5. Tightly roll up each tortilla, tucking in the ends as you go to form a secure wrap. Slice the wraps in half diagonally if desired.
  6. Serve immediately with carrot sticks and celery sticks on the side, and a small serving of additional hummus for dipping.
