Ingredients
- 0.5 cup hummus
- 3 whole wheat tortillas (8-inch)
- 0.5 cup shredded carrots
- 0.5 cup cucumber (chopped)
- 0.5 yellow bell pepper (thinly sliced)
- 1 cup mixed greens
- 1 tablespoon feta cheese (crumbled)
- 1 carrot (medium, cut into sticks)
- 1 celery stalk (cut into sticks)
- 2 tablespoon hummus (for dipping)
Instructions
- Lay out each whole wheat tortilla on a clean surface.
- Spread about 2 tablespoons of hummus evenly over the center of each tortilla, leaving a border around the edges.
- Evenly distribute the shredded carrots, chopped cucumber, thinly sliced yellow bell pepper, and mixed greens over the hummus.
- If using, sprinkle a small amount of crumbled feta cheese over the vegetables.
- Tightly roll up each tortilla, tucking in the ends as you go to form a secure wrap. Slice the wraps in half diagonally if desired.
- Serve immediately with carrot sticks and celery sticks on the side, and a small serving of additional hummus for dipping.
