  1. Season the pork chop with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
  2. In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, and minced garlic to create the honey-mustard sauce. Set aside.
  3. Heat 1 tablespoon olive oil in a small non-stick skillet over medium-high heat. Once hot, add the pork chop and sear for 3-4 minutes per side, or until cooked through and lightly browned.
  4. While the pork cooks, prepare the mashed potatoes: bring 3/4 cup water to a boil in a small saucepan. Remove from heat, stir in 1/4 cup milk, 1 tablespoon butter, and the instant mashed potato flakes until smooth. Season to taste.
  5. In a microwave-safe bowl, combine 1 cup green beans with 1 tablespoon water. Cover and microwave for 3-4 minutes, or until tender-crisp.
  6. Once the pork is cooked, pour the reserved honey-mustard sauce over the pork chop in the skillet. Simmer for 1 minute, flipping the pork once to coat evenly.
  7. Serve the pork medallions with the honey-mustard sauce, alongside the instant mashed potatoes and steamed green beans.
