Ingredients
- 1.5 pound chicken breast (boneless, skinless, cut into thin cutlets)
- 2 tablespoon olive oil
- 3 tablespoon honey
- 2 tablespoon Dijon mustard
- 2 clove garlic (minced)
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 pound fresh green beans (trimmed)
- 1 tablespoon butter
- 2 package ready jasmine rice (pre-cooked microwave pouches)
Instructions
- In a small bowl, whisk together honey, Dijon mustard, minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Season chicken cutlets with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken for 4 minutes per side until golden and cooked through to 165 degrees F.
- Pour the honey mustard sauce over the chicken in the skillet, tossing for 1 minute until the sauce bubbles and glazes the chicken, then remove chicken to a platter.
- In the same skillet over medium heat, melt butter and add trimmed fresh green beans along with 2 tablespoons of water. Cover and steam for 4 minutes until crisp-tender.
- Microwave the ready jasmine rice packages according to package directions for 90 seconds. Serve chicken cutlets alongside the glazed green beans and warm rice.
