- 2.5 pound chicken thighs (boneless, skinless)
- 3 sweet potatoes (diced into 3/4-inch cubes)
- 1.5 pound green beans (trimmed)
- 0.25 cup honey
- 0.25 cup Dijon mustard
- 3 tablespoon olive oil
- 1 teaspoon garlic powder
- 1.5 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Preheat oven to 400°F. Line two large rimmed baking sheets with parchment paper.
- Toss diced sweet potatoes and trimmed green beans with 2 tbsp olive oil, 1 tsp salt, and 1/2 tsp black pepper. Spread evenly across the baking sheets.
- In a small bowl, whisk honey, Dijon mustard, remaining 1 tbsp olive oil, garlic powder, remaining 1/2 tsp salt, and remaining 1/2 tsp black pepper. Coat chicken thighs in glaze and nestle among vegetables.
- Roast for 30-35 minutes until sweet potatoes are tender and chicken reaches an internal temperature of 165°F. Rest 5 minutes before serving.
Notes
Substitute chicken breasts if preferred, reducing bake time by 5 minutes to prevent drying out.
