Ingredients
- 1.5 pound salmon fillets (skinless, divided into 5 portions)
- 1.5 cup shelled edamame (frozen, thawed)
- 1 cup brown rice (uncooked)
- 2 cup water
- 3 cup broccoli florets (steamed)
- 2 tablespoon honey
- 2 tablespoon gluten-free tamari
- 1 tablespoon sesame oil
- 1 teaspoon fresh ginger (grated)
- 0.5 teaspoon salt
Instructions
- Combine brown rice, 2 cups water, and 1/4 tsp salt in a saucepan; bring to boil, cover, reduce heat, and cook for 15 minutes until tender.
- Whisk honey, gluten-free tamari, and grated fresh ginger in a small dish to make glaze.
- Heat sesame oil in a skillet over medium-high heat. Season salmon fillets with remaining 1/4 tsp salt and cook for 3 minutes per side.
- Pour honey tamari glaze over salmon fillets during the last minute of cooking, spooning glaze over top until glossy.
- Steam broccoli florets and shelled edamame in microwave or steam basket for 4 minutes.
- Serve glazed salmon over brown rice accompanied by steamed broccoli and edamame.
Notes
Thaw shelled edamame quickly in warm water before steaming with broccoli.
