Ingredients
- 1 tablespoon olive oil
- 1.25 pound chicken tenders (boneless, skinless)
- 0.5 cup honey
- 0.25 cup soy sauce
- 1 tablespoon sriracha
- 1 tablespoon cornstarch (mixed with 2 tablespoons cold water)
- 8 flour tortillas (large)
- 2 cup coleslaw mix (pre-shredded)
- 0.25 cup roasted peanuts (chopped)
- 1 package potato chips
- 1.5 cup red grapes
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken tenders and cook for 3-4 minutes per side, until browned and cooked through. Remove chicken from the skillet and set aside.
- In a small bowl, whisk together honey, soy sauce, and sriracha (if using).
- Pour the honey-soy mixture into the skillet. Bring to a simmer over medium heat. Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
- Return cooked chicken tenders to the skillet, tossing to coat evenly with the glaze.
- Warm flour tortillas according to package directions.
- To assemble, place a portion of glazed chicken on a warm tortilla. Top with coleslaw mix and chopped roasted peanuts. Fold or roll into a wrap.
- Serve the honey glazed chicken wraps with potato chips and red grapes on the side.
Notes
You can prep the vegetables and sauce ingredients ahead of time to make assembly even quicker. Adjust sriracha to your preferred spice level.
