Ingredients
- 1 tablespoon sesame oil
- 1.5 pound ground turkey (lean)
- 1 yellow onion (medium, chopped)
- 3 clove garlic (minced)
- 1 bell pepper (finely diced)
- 1 can water chestnuts (drained and chopped)
- 0.25 cup soy sauce
- 2 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon fresh ginger (grated)
- 1 head butter lettuce (separated into leaves)
- 0.25 cup fresh cilantro (chopped, for garnish)
- 2 cup white rice (cooked, for serving)
Instructions
- Heat sesame oil in a large skillet or wok over medium-high heat. Add the lean ground turkey and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
- Add the chopped yellow onion, minced garlic, and finely diced bell pepper to the skillet. Cook for 3-4 minutes until vegetables are slightly softened.
- Stir in the drained and chopped water chestnuts.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, and grated fresh ginger.
- Pour the sauce over the turkey mixture in the skillet. Cook for 2-3 minutes, stirring constantly, until the sauce thickens slightly and coats the turkey.
- Serve the turkey mixture in butter lettuce cups. Offer cooked white rice and chopped fresh cilantro for serving, if desired.
Notes
Cooked white rice can be prepared in advance to save time. Store turkey mixture and lettuce separately for best quality when reheating.
