  1. Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated fresh ginger, and 1/4 teaspoon black pepper. Set aside.
  3. Toss chicken breast cubes with 1 tablespoon olive oil, then place on the prepared baking sheet in a single layer. Roast for 10 minutes.
  4. While chicken roasts, combine 1 cup uncooked quinoa with 2 cups water or vegetable broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until liquid is absorbed. Fluff with a fork.
  5. Remove chicken from the oven. Pour the honey-garlic glaze over the chicken and toss to coat. Add trimmed green beans to the same baking sheet alongside the chicken. Return to oven and roast for another 8-10 minutes, or until chicken is cooked through and green beans are tender-crisp.
  6. Divide cooked quinoa among serving bowls. Top with honey-garlic glazed chicken and roasted green beans. Serve immediately.
