Ingredients
- 1.5 pound chicken breast (boneless, skinless, sliced into 1-inch thick pieces)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 cup white rice (uncooked)
- 1 head broccoli (cut into florets)
- 4 clove garlic (minced)
- 0.25 cup soy sauce
- 2 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch
- 0.5 cup water
Instructions
- Cook the white rice according to package directions.
- While rice cooks, season the chicken breast slices with salt and black pepper.
- In a small bowl, whisk together the minced garlic, soy sauce, honey, rice vinegar, cornstarch, and water to create the sauce. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 3-4 minutes per side, until browned and cooked through. Remove chicken from skillet and keep warm.
- While chicken cooks, steam the broccoli florets until tender-crisp, about 5 minutes.
- Pour the prepared honey-garlic sauce into the same skillet and bring to a simmer, stirring constantly, until it thickens slightly, about 1-2 minutes.
- Return the cooked chicken to the skillet, tossing to coat with the sauce.
- Serve the honey-garlic chicken immediately with the steamed white rice and broccoli.
