Honey Garlic Chicken Dinner

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 1/2 pounds chicken thighs and cook for 5-7 minutes, stirring occasionally, until browned on all sides and mostly cooked through.
  2. Add 1 bag frozen broccoli florets to the skillet. Cook for 3-5 minutes, stirring occasionally, until broccoli is tender-crisp.
  3. Stir in 4 minced garlic cloves and cook for 1 minute until fragrant.
  4. In a small bowl, whisk together 1/2 cup chicken broth, 1/4 cup honey, 1/4 cup soy sauce, and 1 tablespoon cornstarch until smooth.
  5. Pour the sauce over the chicken and broccoli in the skillet. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats everything.
  6. While the skillet meal is cooking, prepare 3 cups pre-cooked brown rice according to package directions. Serve the Honey Garlic Chicken Dinner immediately over the brown rice.

Notes

Chicken thighs are recommended for flavor and tenderness, but chicken breast can be substituted if preferred.
