  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken thigh pieces and cook for 5-7 minutes, until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  2. In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
  3. Whisk together honey, soy sauce, rice vinegar, and grated fresh ginger in a small bowl.
  4. Pour the sauce into the skillet and bring to a simmer. Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens to your desired consistency, about 1-2 minutes.
  5. Return cooked chicken to the skillet, tossing to coat evenly with the honey garlic sauce.
  6. Meanwhile, bring a pot of water to a boil. Add bok choy and blanch for 1-2 minutes until tender-crisp. Remove with tongs and set aside.
  7. In the same boiling water, add instant ramen noodles (without seasoning packets) and cook according to package directions, usually 2-3 minutes. Drain well.
  8. Serve the honey garlic chicken over the ramen noodles, alongside the steamed bok choy. Garnish with sesame seeds, if desired.

Notes

Ensure chicken is fully cooked before returning it to the sauce. This dish is excellent for meal prep as leftovers reheat well.
