Instructions

  1. Preheat oven to 375 degrees Fahrenheit. Lightly grease a 9x5-inch loaf pan.
  2. In a large bowl, combine the ground beef, diced yellow onion, 2 minced cloves garlic, panko breadcrumbs, whole milk, large egg, Worcestershire sauce, dried Italian seasoning, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix gently until just combined; do not overmix.
  3. Press the meat mixture firmly into the prepared loaf pan. In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to make the glaze. Spread half of the glaze evenly over the top of the meatloaf.
  4. Bake the meatloaf for 45 minutes. While the meatloaf bakes, place the quartered Russet potatoes in a large pot and cover with cold water. Add 1/2 teaspoon salt and bring to a boil over high heat. Cook for 15-20 minutes, or until fork-tender. Drain well.
  5. Spread the fresh green beans on a large baking sheet. Drizzle with 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Toss to coat. After the meatloaf has baked for 45 minutes, remove from oven, spread the remaining glaze over the top, and place the baking sheet with green beans in the oven.
  6. Continue baking the meatloaf and green beans for another 15-20 minutes, or until the green beans are tender-crisp and the meatloaf reaches an internal temperature of 160 degrees Fahrenheit. The green beans may be done sooner, remove them when they reach your desired tenderness.
  7. While the meatloaf rests and green beans roast, return the drained potatoes to the pot. Add the warmed heavy cream, unsalted butter, and remaining 2 minced cloves garlic. Mash until smooth and creamy. Taste and adjust seasoning as needed.
  8. Remove meatloaf from oven and let it rest for 10 minutes before slicing. Serve the sliced meatloaf with garlic mashed potatoes and roasted green beans.

Notes

Letting the meatloaf rest before slicing is crucial to ensure it stays juicy and intact. You can prepare the meatloaf mixture ahead of time and refrigerate it for up to 24 hours before baking.
