Homestyle Chicken Meatloaf with Squash Medley

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan or an oven-safe dish.
  2. In a large bowl, combine the ground chicken, finely diced yellow onion, minced garlic, large egg, gluten-free breadcrumbs, 1/2 teaspoon dried Italian seasoning, 1/4 teaspoon fine sea salt, and 1/4 teaspoon black pepper. Mix gently until just combined; do not overmix.
  3. Form the mixture into a loaf shape and place it into the prepared pan. Bake for 40-50 minutes, or until cooked through and the internal temperature reaches 165°F (74°C).
  4. While the meatloaf bakes, toss the peeled and cubed butternut squash and trimmed green beans with 1 tablespoon olive oil and a pinch of salt and pepper on a baking sheet. Roast for 20-25 minutes, or until vegetables are very tender. Ensure squash is soft and easy to mash.
  5. Let the meatloaf rest for 5-10 minutes before slicing. Serve slices of meatloaf alongside the roasted squash medley.

Notes

For the lowest residue, ensure onions and garlic are very finely minced and well-cooked into the meatloaf. Butternut squash should be cooked until very soft and easily digestible.
