- 1 cup instant mashed potato flakes

Instructions
- In a microwave-safe bowl, combine the pre-cooked shredded beef, beef broth, onion powder, garlic powder, and dried thyme. Stir well to combine.
- Microwave the beef mixture on high for 3-4 minutes, stirring halfway through, until the beef is heated through and the broth is simmering.
- While the beef is heating, place the frozen mixed vegetables in a separate microwave-safe bowl. Microwave on high for 4-5 minutes, or until the vegetables are tender-crisp.
- Prepare the instant mashed potato flakes according to the package directions. Typically, this involves combining the flakes with hot water and a pinch of salt, then stirring until smooth.
- Divide the prepared mashed potatoes between two serving bowls. Top with the heated beef mixture and spoon the mixed vegetables alongside. Season with additional salt and black pepper to taste before serving.
Notes
For an extra rich flavor, a pat of butter can be added to the mashed potatoes.
