Ingredients
- 1 pound lean ground beef (at least 90% lean)
- 1 tablespoon olive oil
- 1 yellow onion (medium, diced)
- 3 clove garlic clove (minced)
- 2 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 14.5 ounce diced tomatoes (undrained)
- 15 ounce chickpeas (drained and rinsed)
- 1 beef bouillon cube
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat. Add the diced yellow onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant.
- Add the lean ground beef to the pot. Cook, breaking it up with a spoon, until it is browned all over. Drain any excess fat.
- Stir in the 2 tablespoons of chili powder, 1 tablespoon of ground cumin, and 1 teaspoon of dried oregano. Cook for 1 minute, stirring constantly, to toast the spices.
- Add the undrained diced tomatoes, drained and rinsed chickpeas, and the beef bouillon cube dissolved in 2 cups of hot water. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Bring the chili to a simmer, then reduce the heat to low, cover, and let it cook for at least 25 minutes, stirring occasionally, allowing the flavors to meld and the chili to thicken. Taste and adjust seasoning as needed.
Notes
This chili tastes even better the next day as the flavors deepen, making it excellent for leftovers. Serve it on its own or with a simple side like corn tortilla chips for an extra crunch.
