Homestyle Beef and Black Bean Chili

  1. In a large skillet, brown the ground beef over medium-high heat for 5-7 minutes, breaking it up with a spoon. Drain any excess fat.
  2. Transfer the browned beef to the slow cooker. Add the diced yellow onion, red bell pepper, and minced garlic to the slow cooker. Stir to combine.
  3. Pour in the crushed tomatoes, black beans (rinsed and drained), and beef broth. Add the chili powder, ground cumin, dried oregano, smoked paprika, salt, and black pepper. Stir all ingredients well to combine.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chili is hot and flavors are melded.
  5. About 25 minutes before serving, prepare the cilantro lime rice. In a medium pot, combine white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until water is absorbed and rice is tender.
  6. Once rice is cooked, fluff with a fork. Stir in the chopped fresh cilantro and fresh lime juice.
  7. Serve the chili hot over a bed of cilantro lime rice. Garnish with shredded cheddar cheese, if desired.

Notes

Leftovers store well in an airtight container for up to 3-4 days, making it perfect for meal prep. The flavors often deepen overnight!
