Ingredients
- 1.5 pound chicken breast (boneless, skinless)
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 0.5 teaspoon garlic powder
- 0.5 teaspoon fine sea salt

- 1 celery root (large, about 1 pound, peeled and cubed)
- 0.25 cup unsweetened dairy-free milk
- 1 cucumber (medium, peeled, seeded, sliced)
Instructions
- Preheat oven to 400°F (200°C).
- Pat the chicken breasts dry. Rub with 1/2 tablespoon olive oil, 1 teaspoon dried thyme, 1/4 teaspoon garlic powder, 1/4 teaspoon fine sea salt, and 1/8 teaspoon black pepper.
- Place chicken breasts on a baking sheet and roast for 25-30 minutes, or until cooked through and internal temperature reaches 165°F (74°C).
- While chicken roasts, place the peeled and cubed celery root into a pot of cold water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until very tender. Drain well.
- Return the drained celery root to the pot. Add 1/4 cup unsweetened dairy-free milk, remaining 1/2 tablespoon olive oil, 1/4 teaspoon fine sea salt, and 1/8 teaspoon black pepper. Mash until smooth and creamy. Ensure it's very smooth and soft for low-residue preferences.
- Gently steam the peeled, seeded, and sliced cucumber for 3-5 minutes, until just warmed and softened, being careful not to overcook. This helps with the low-residue requirement.
- Serve the Herbed Roasted Chicken alongside the celery root mash and steamed cucumber slices.
Notes
Ensure celery root is cooked until very soft and mashed completely smooth. Cucumbers should be peeled and seeded for a lower residue meal.
