- 4 pork chops (boneless, about 1-inch thick)
- 0.5 teaspoon dried thyme
- 0.5 teaspoon dried rosemary
- 0.5 teaspoon garlic powder
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoon olive oil
- 1 pound fresh asparagus (tough ends trimmed)
- 4 slice crusty bread (dairy-free)
Instructions
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- In a small bowl, combine dried thyme, dried rosemary, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Season both sides of the pork chops generously with the herb mixture.
- Toss the fresh asparagus with 1 tablespoon olive oil and 1/4 teaspoon salt. Spread in a single layer on the prepared baking sheet.
- Roast the asparagus for 10-12 minutes, or until tender-crisp.
- While asparagus roasts, heat 1 tablespoon olive oil in a large oven-safe skillet (cast iron works well) over medium-high heat. Sear the pork chops for 3-5 minutes per side, until deeply golden brown. Finish in the oven with the asparagus for the last 5-7 minutes if needed to reach an internal temperature of 145 degrees F (63 degrees C).
- Let the pork chops rest for 5 minutes before serving. Serve with the roasted asparagus and dairy-free crusty bread.
