Herbed Pork Chops

  1. Preheat oven to 400°F (200°C). In a large bowl, toss 2 pounds quartered baby potatoes with 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Spread them in a single layer on a baking sheet. Roast for 20 minutes, or until tender and lightly browned.
  2. While potatoes roast, pat 8 pork chops dry. In a small bowl, combine 1 tablespoon dried Italian seasoning, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Rub the seasoning mixture evenly over both sides of the pork chops.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Once hot, add the seasoned pork chops (cook in batches if necessary to avoid overcrowding). Sear for 3-4 minutes per side, until golden brown and cooked through (internal temperature of 145°F/63°C).
  4. In a medium bowl, combine 5 ounces mixed greens salad with 1/4 cup light vinaigrette dressing. Toss gently to coat.
  5. Serve the Herbed Pork Chops immediately with the roasted potatoes and green salad on the side. Garnish potatoes with chopped fresh rosemary if desired.

Notes

Leftover pork chops can be sliced and added to salads or sandwiches the next day.
