Ingredients
- 2.67 cup chicken broth (low-sodium)
- 0.75 cup lentils (dry, sorted and rinsed)
- 0.75 cup onion (chopped)
- 0.5 cup brown rice (dry)
- 0.25 cup water
- 0.5 teaspoon basil (fresh or dried)
- 0.5 teaspoon oregano
- 0.5 teaspoon thyme
- 0.5 cup mozzarella cheese (part-skim, divided)
Instructions
- Preheat oven to 350 °F. In a 2 1/2 quart casserole dish add the chicken broth, lentils, onions, brown rice, water, basil, oregano, thyme, and 1/4 cup mozzarella cheese.
- Stir to combine.
- Cover with foil and bake at 350 °F for 2 hours. Check casserole after 1 hour and add more broth if it seems dry.
- Remove foil and top with remaining mozzarella cheese.
- Bake another 2 or 3 minutes until all the cheese is melted.
