  1. Preheat oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the chopped chicken breast pieces, chopped zucchini, chopped yellow bell pepper, chopped yellow onion, and minced garlic.
  3. Drizzle with olive oil, then sprinkle with dried oregano, dried thyme, garlic powder, and black pepper. Toss well to ensure all ingredients are evenly coated.
  4. Spread the chicken and vegetable mixture in a single layer on the prepared baking sheet. Roast for 20 minutes.
  5. While the chicken and vegetables are roasting, toss the trimmed fresh green beans with a small amount of olive oil (from the 1 tbsp total, if possible) and a pinch of salt and pepper. Add them to the baking sheet after 20 minutes, gently stirring the chicken and other vegetables.
  6. Continue roasting for another 10-15 minutes, or until the chicken is cooked through (internal temperature 165°F) and the vegetables are tender-crisp. Serve immediately. Portion remaining servings into airtight containers for easy meal prep later in the week.
