  1. Preheat oven to 375°F. Lightly grease a 9x13 inch baking dish.
  2. In a large pot, add the 2 pounds boneless skinless chicken breast and cover with water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until chicken is cooked through. Remove chicken, let cool slightly, then shred using two forks. Discard cooking liquid.
  3. In the same large pot (or another), heat 1 tablespoon garlic-infused olive oil over medium heat. Add the diced red bell pepper, finely diced carrots, and finely diced zucchinis. Cook for 7-10 minutes until vegetables are very tender.
  4. Stir in the 2 cups white rice, 4 cups low sodium chicken broth, 1 teaspoon ground ginger, 1/2 teaspoon white pepper, 1 1/2 teaspoons salt, and 1/2 teaspoon black pepper. Bring to a simmer.
  5. Add the shredded chicken to the pot and stir to combine. Transfer the entire mixture to the prepared baking dish.
  6. Cover tightly with aluminum foil and bake for 50-60 minutes, or until rice is tender and liquid is absorbed. Remove from oven and let stand, covered, for 5-10 minutes. Garnish with fresh cilantro, if using, before serving.

Notes

For best results and low-residue compliance, ensure all vegetables are peeled and diced very finely. Cooked leftovers keep well for up to 4 days in the refrigerator.
