  1. Preheat oven broiler to high. Line a baking sheet with foil.
  2. In a small bowl, combine 1 teaspoon dried thyme, 1 teaspoon dried rosemary, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper.
  3. Pat 1 pound pork tenderloin medallions dry. Sprinkle generously with the herb mixture, pressing lightly to adhere.
  4. Toss 1 large diced sweet potato with 1/2 tablespoon olive oil and spread in a single layer on the prepared baking sheet. Broil for 8-10 minutes, flipping halfway, until slightly tender and lightly browned.
  5. While sweet potatoes broil, heat remaining 1/2 tablespoon olive oil in a large non-stick skillet over medium-high heat. Sear pork medallions for 3-4 minutes per side, until golden brown and cooked through (internal temperature of 145°F).
  6. During the last 5 minutes of sweet potato cooking, add 1/2 pound fresh green beans to the baking sheet with the sweet potatoes. Broil until tender-crisp.
  7. Serve the herb-crusted pork medallions with the roasted sweet potatoes and green beans, dividing evenly into 4 portions.

Notes

To ensure your sweet potatoes and green beans are cooked perfectly within the time limit, dice the sweet potatoes into small, uniform cubes. Green beans should be added to the broiler only for the last few minutes so they remain tender-crisp.
