Ingredients
- 4 cod fillets
- 12 ounce green beans (trimmed)
- 2 tablespoon lemon juice (freshly squeezed)
- 1 tablespoon dried Herbes de Provence
- 4 clove garlic (minced)
- 0.5 teaspoon black pepper (freshly ground)
Instructions
- Pat cod fillets dry with paper towels. In a shallow dish, combine the dried Herbes de Provence, 2 cloves minced garlic, and 1/4 teaspoon black pepper.
- Press each cod fillet into the herb mixture to lightly coat both sides.
- Heat a large non-stick skillet over medium-high heat. Add the herb-crusted cod fillets and pan-sear for 3-4 minutes per side, until golden and cooked through. Remove from skillet and keep warm.
- Add the green beans to the same skillet along with the remaining 2 cloves minced garlic. Add 1/4 cup water, cover, and steam for 5-7 minutes until tender-crisp. Remove lid, add lemon juice, and sauté for 1-2 minutes until water evaporates.
- Divide the cod and green beans into 4 servings. Sprinkle with remaining black pepper and serve.
Notes
Using quality Herbes de Provence will provide the best authentic flavor. A squeeze of fresh lemon juice before serving adds brightness. This dish is best enjoyed fresh.
