- 4 ounce beef top sirloin steak (cut into 1-inch medallions)

- 1 teaspoon Italian seasoning

- 6 ounce fresh spinach
- 2 tablespoon cream cheese
- 1 tablespoon heavy cream
- 0.25 teaspoon onion powder
- 1 pinch ground nutmeg
Instructions
- Pat the beef medallions dry with paper towels. In a small bowl, combine the Italian seasoning, garlic powder, and 1/4 teaspoon of black pepper. Rub this mixture evenly over both sides of the beef.
- Heat 1 tablespoon of olive oil in a medium skillet over medium-high heat. Once hot, add the beef medallions and sear for 3-4 minutes per side for medium-rare, or until desired doneness is reached. Remove beef from skillet and let it rest on a plate.
- While the beef cooks, wilt the fresh spinach in the microwave or a separate pan for 2-3 minutes. Squeeze out any excess liquid.
- Return the spinach to the skillet (no need to clean). Stir in the cream cheese, heavy cream, onion powder, and a pinch of ground nutmeg. Cook over medium heat for 2-3 minutes, stirring constantly, until the cream cheese is melted and well combined.
- Serve the herb-crusted beef medallions immediately with the warm creamed spinach on the side.
Notes
Ensure all seasonings used are salt-free to keep the sodium low. If you prefer, a tablespoon of grated Parmesan cheese can be added to the creamed spinach for extra flavor, but check its sodium content.
