Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line with parchment paper.
- Place the cod fillets in the prepared baking dish. In a small bowl, combine 1 tablespoon of olive oil, halved cherry tomatoes, halved pitted Kalamata olives, minced garlic, dried oregano, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Mix well.
- Spoon the tomato-olive mixture evenly over the cod fillets.
- Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork. Cooking time will vary depending on the thickness of the fillets.
- While the fish bakes, prepare the instant couscous: In a medium bowl, combine 1 1/2 cups of instant couscous with 1 1/2 cups of boiling water. Stir well, cover, and let stand for 5 minutes, then fluff with a fork. Season with remaining 1/4 teaspoon of salt and 1/8 teaspoon of black pepper.
- Steam the frozen green beans according to package directions (e.g., in the microwave or on the stovetop) until tender-crisp.
- Serve the baked cod immediately with the couscous and steamed green beans. Garnish with fresh parsley, if using.
Notes
Any firm white fish like tilapia or snapper can be used instead of cod.
