Instructions

  1. Preheat oven to 400°F. Line a small baking sheet with parchment paper.
  2. Place the cod fillet on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil, 1/4 teaspoon of salt, 1/8 teaspoon of black pepper, and sprinkle with 1/2 tablespoon each of fresh parsley and fresh thyme. Top with lemon slices.
  3. Bake for 12-15 minutes, or until the fish is flaky and cooked through.
  4. While the cod bakes, heat the remaining 1/2 tablespoon of olive oil in a small skillet over medium heat. Add the thinly sliced leek and minced garlic, and sauté for 3-4 minutes until softened.
  5. Add the green beans and chicken broth to the skillet. Bring to a simmer, then cover and cook for 5-7 minutes, until green beans are tender-crisp. Season with remaining 1/4 teaspoon of salt and 1/8 teaspoon of black pepper, and squeeze a bit of fresh lemon juice over the vegetables.
  6. Serve the herb-baked cod immediately with the braised leeks and green beans.

Notes

Ensure fresh herbs are used for the best flavor, as they complement the delicate cod well. You can substitute other non-starchy green vegetables like asparagus or broccolini for the green beans if preferred.
