- 1.5 pound boneless pork shoulder or loin (cut into 1-inch pieces)
- 1 tablespoon olive oil
- 1 yellow onion (medium, chopped)
- 2 carrots (peeled, sliced)
- 2 celery stalks (sliced)
- 1 pound potatoes (peeled, 1-inch cubes)
- 1 apple (firm, cored, diced)
- 0.25 cup all-purpose flour
- 1.5 cup unsweetened apple cider
- 1.5 cup chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoon fresh parsley (chopped)
Instructions
- Pat the pork pieces dry with paper towels and season generously with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the seasoned pork in batches, searing until browned on all sides, about 3-4 minutes per batch. Remove pork from the pot and set aside.
- Reduce heat to medium. Add the yellow onion, carrots, and celery to the pot and cook, stirring occasionally, until softened, about 5-7 minutes.
- Sprinkle the all-purpose flour over the vegetables and stir for 1 minute to coat.
- Pour in the unsweetened apple cider and chicken broth, scraping up any browned bits from the bottom of the pot. Bring the mixture to a gentle simmer.
- Return the seared pork to the pot. Stir in the potatoes, apple, dried thyme, bay leaf, remaining 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Cover the pot and reduce heat to low. Simmer for 45-60 minutes, or until the pork is very tender and the vegetables are cooked through, stirring occasionally.
- Remove the bay leaf before serving. Ladle the stew into bowls and garnish with fresh parsley if desired.
Notes
This stew is even better the next day as the flavors deepen. Serve with crusty bread for soaking up the delicious broth.
