  1. Heat 1 tablespoon olive oil in a large skillet or pot over medium-high heat. Add 2 pounds ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes.
  2. Drain any excess grease from the skillet. Stir in 1 teaspoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon dried oregano, and 1/4 teaspoon cayenne pepper. Cook for 1 minute more, stirring constantly, until fragrant.
  3. Pour in 1/2 cup water, bring to a simmer, and cook until the liquid has mostly evaporated and the beef is well coated, about 3-5 minutes. Season with 1 teaspoon salt and 1/2 teaspoon black pepper to taste.
  4. While the beef is cooking, prepare 2 packages microwaveable brown rice according to package directions.
  5. To serve, divide the cooked brown rice among 8 bowls. Top with the seasoned ground beef, 3 cups shredded lettuce, 2 diced Roma tomatoes, and 1 1/2 cups shredded cheddar cheese. Garnish with 1 cup salsa and 1/2 cup sour cream, if desired.

Notes

This meal is easily customizable with your family's favorite toppings like black beans, corn, or pickled jalapeƱos. Leftovers store well in separate containers for easy lunches.
