- 1 tablespoon olive oil
- 1 pound ground beef
- 0.5 cup yellow onion (diced)
- 0.5 cup green bell pepper (diced)
- 8 ounce tomato sauce
- 0.25 cup ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon brown sugar
- 1 teaspoon Worcestershire sauce
- 0.5 teaspoon garlic powder
- 0.25 teaspoon black pepper (ground)
- 2 cup instant mashed potato flakes
- 10 ounce coleslaw mix
- 0.5 teaspoon salt
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
- Add 1/2 cup diced yellow onion and 1/2 cup diced green bell pepper to the skillet. Cook until softened, about 3-5 minutes.
- Stir in 1 (8 ounce) can tomato sauce, 1/4 cup ketchup, 1 tablespoon yellow mustard, 1 tablespoon brown sugar, 1 teaspoon Worcestershire sauce, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until slightly thickened. Season with salt to taste.
- While the sloppy joe mixture simmers, prepare 2 cups instant mashed potato flakes according to package directions.
- Serve the sloppy joe mixture over the mashed potatoes. Accompany with 1 (10 ounce) bag coleslaw mix for a complete meal.
Notes
For extra flavor, you can add a pinch of smoked paprika to the sloppy joe sauce. Leftovers are great for lunch the next day!
