Ingredients
- 2 can black beans (15.5 ounces each, low-sodium, drained and rinsed)
- 2 cup chicken broth (low-sodium)
- 1 cup salsa (fresh)
- 1 teaspoon cumin (ground)
- 4 tablespoon sour cream (low-fat)
- 2 tablespoon cilantro (fresh, chopped)
Instructions
- Lightly purée one can of black beans with broth, salsa, and cumin in a blender.
- In a medium saucepan, combine puréed bean mixture with remaining beans and heat through.
- To serve, ladle soup into 4 bowls.
- Top each bowl with one tablespoon of sour cream and garnish with the cilantro.
