Ingredients
- 12 ounce turkey sausage (fully cooked gluten-free smoked, sliced into 1/2-inch rounds)
- 10 ounce baby gold potatoes (halved)
- 1 Honeycrisp apple (medium, cored and diced)
- 3 cup baby spinach (fresh)
- 1 tablespoon olive oil
- 0.25 cup apple cider
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper (ground)
Instructions
- Place halved baby gold potatoes in a microwave-safe bowl with 2 tablespoons of water, cover, and microwave on high for 4 minutes to par-cook until fork-tender.
- Heat olive oil in a large skillet over medium-high heat. Add sliced turkey sausage and par-cooked potatoes, cooking for 6 to 8 minutes until sausage edges are browned and potatoes are golden.
- Add diced Honeycrisp apple, kosher salt, and black pepper to the skillet. Cook for 3 minutes until apples begin to soften.
- Pour in apple cider to deglaze the skillet, scraping up any browned bits from the bottom.
- Toss in baby spinach and stir for 1 to 2 minutes until just wilted, then remove from heat and serve warm.
Notes
Par-cooking the baby potatoes in the microwave cuts total cooking time in half.
