- 0.5 cup black soybeans (rinsed and drained)
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon garlic powder
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
- 1 package cauliflower rice (12 ounce bag)
- 2 tablespoon lime juice
- 0.25 cup fresh cilantro (chopped, for garnish)
- 0.5 avocado (medium, sliced, for serving)
- 2 tablespoon nutritional yeast
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the diced yellow onion and cook for 3-4 minutes until softened.
- Add the minced garlic and diced red bell pepper. Continue to cook for another 3-5 minutes until the pepper starts to soften.
- Stir in the crumbled extra-firm tofu and black soybeans. Add the ground cumin, smoked paprika, garlic powder, salt, and black pepper. Cook for 5-7 minutes, breaking up the tofu and mixing the spices well.
- Stir in the nutritional yeast and cook for 1 minute more.
- Prepare the cauliflower rice according to package directions, typically microwaving or sautéing for 3-5 minutes.
- Remove the tofu and bean mixture from heat. Stir in the lime juice. Serve over cauliflower rice, garnished with fresh cilantro and sliced avocado.
Notes
For an even richer flavor, you can briefly marinate the crumbled tofu in some lime juice and spices before cooking.
