- 30 ounce black beans (rinsed and drained)
- 15 ounce whole kernel corn (drained)
- 0.5 cup vegetable broth
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper (freshly ground)
- 2 cup white rice (uncooked)
- 1 avocado (large, diced)
- 0.25 cup fresh cilantro (chopped)
- 5 eggs (large, fried)
Instructions
- Prepare the white rice according to package directions. For quick cooking, use a rice cooker or stovetop simultaneously while prepping other ingredients.
- Heat the olive oil in a large skillet or pot over medium heat. Add the chopped yellow onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, chili powder, and ground cumin. Cook for 1 minute until fragrant.
- Add the rinsed and drained black beans, drained whole kernel corn, vegetable broth, kosher salt, and black pepper. Bring to a gentle simmer and cook for 5-7 minutes to allow flavors to meld and to heat through.
- While the beans simmer, dice the avocado and chop the fresh cilantro.
- If desired, fry the eggs in a separate pan to your liking for topping the bowls.
- Serve the warm black bean and corn mixture over the cooked white rice. Top each bowl with diced avocado, fresh cilantro, and a fried egg, if using.
Notes
For a bit of zest, a squeeze of lime juice over the finished bowls would be wonderful. These bowls are also great with a dollop of sour cream or a sprinkle of shredded cheese.
