  1. Prepare the white rice according to package directions. For quick cooking, use a rice cooker or stovetop simultaneously while prepping other ingredients.
  2. Heat the olive oil in a large skillet or pot over medium heat. Add the chopped yellow onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, chili powder, and ground cumin. Cook for 1 minute until fragrant.
  4. Add the rinsed and drained black beans, drained whole kernel corn, vegetable broth, kosher salt, and black pepper. Bring to a gentle simmer and cook for 5-7 minutes to allow flavors to meld and to heat through.
  5. While the beans simmer, dice the avocado and chop the fresh cilantro.
  6. If desired, fry the eggs in a separate pan to your liking for topping the bowls.
  7. Serve the warm black bean and corn mixture over the cooked white rice. Top each bowl with diced avocado, fresh cilantro, and a fried egg, if using.

Notes

For a bit of zest, a squeeze of lime juice over the finished bowls would be wonderful. These bowls are also great with a dollop of sour cream or a sprinkle of shredded cheese.
