Ingredients
- 0.75 pound ground pork
- 1 tablespoon olive oil
- 0.5 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1 tablespoon Harissa paste
- 0.5 can diced tomatoes (undrained)
- 0.5 cup instant couscous (uncooked)
- 0.5 cup chicken broth
- 0.5 lemon (juiced)
- 0.5 English cucumber (diced)
- 0.25 cup fresh mint (chopped)
- 0.5 teaspoon salt (to taste)
- 0.25 teaspoon black pepper (to taste)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground pork and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess fat.
- Add yellow onion to the skillet and sauté for 2-3 minutes until softened. Stir in minced garlic and Harissa paste, cooking for 1 minute until fragrant.
- Stir in diced tomatoes (undrained). Bring to a simmer, then reduce heat to low, cover, and let it cook gently for 5 minutes.
- While the pork simmers, prepare the instant couscous: In a small saucepan, bring 1/2 cup chicken broth to a boil. Remove from heat, stir in instant couscous, cover, and let stand for 5 minutes. Fluff with a fork and stir in half of the lemon juice.
- In a small bowl, combine diced English cucumber and chopped fresh mint. Season with a pinch of salt and a drizzle of olive oil, if desired, for a simple salad.
- Season the ground pork mixture with salt and black pepper to taste. Divide the lemon couscous and Harissa ground pork between two plates. Serve with the cucumber-mint salad.
Notes
Adjust Harissa paste to your preference for heat. A dollop of plain Greek yogurt can cool down the spice and add creaminess.
