Harissa Ground Pork with Lemon Couscous

  1. Heat olive oil in a large skillet over medium-high heat. Add ground pork and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add yellow onion to the skillet and sauté for 2-3 minutes until softened. Stir in minced garlic and Harissa paste, cooking for 1 minute until fragrant.
  3. Stir in diced tomatoes (undrained). Bring to a simmer, then reduce heat to low, cover, and let it cook gently for 5 minutes.
  4. While the pork simmers, prepare the instant couscous: In a small saucepan, bring 1/2 cup chicken broth to a boil. Remove from heat, stir in instant couscous, cover, and let stand for 5 minutes. Fluff with a fork and stir in half of the lemon juice.
  5. In a small bowl, combine diced English cucumber and chopped fresh mint. Season with a pinch of salt and a drizzle of olive oil, if desired, for a simple salad.
  6. Season the ground pork mixture with salt and black pepper to taste. Divide the lemon couscous and Harissa ground pork between two plates. Serve with the cucumber-mint salad.

Notes

Adjust Harissa paste to your preference for heat. A dollop of plain Greek yogurt can cool down the spice and add creaminess.
