Gulf Coast Shrimp Skillet

  1. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium heat.
  2. Add the sliced smoked sausage and cook until lightly browned, about 5 minutes. Remove sausage from skillet and set aside.
  3. Add the chopped yellow onion and minced garlic to the skillet, cooking until fragrant and softened, about 3 minutes.
  4. Stir in the quartered baby red potatoes and 1 cup of chicken broth. Bring to a simmer, then cover and cook for 10-12 minutes, or until potatoes are nearly tender.
  5. Stir in 1 teaspoon of Old Bay seasoning and 1/2 teaspoon of paprika. Add the peeled and deveined shrimp and the cooked smoked sausage back to the skillet.
  6. Add the frozen corn kernels. Cook, uncovered, for 3-5 minutes, or until shrimp turn pink and opaque and corn is heated through.
  7. Garnish with fresh parsley and serve immediately with lemon wedges.

Notes

For an extra kick, add a pinch of cayenne pepper with the Old Bay seasoning.
